1. Salmon Tataki, Dijon & Balsamic

Lightly seared salmon under Dijon mustard miso and a glaze of balsamic — clean, precise and quietly unexpected. This is Chef Rose's Japanese-European balance distilled into a single plate. The mustard cuts through the richness of the fish while the balsamic adds depth without heaviness.

2. Tuna Sashimi Taco

3. Crispy Halibut, Yuzu & Truffle

4. Pork & Seafood Gyoza, Scallion Ponzu

5. A5 Miyazaki Wagyu on Himalayan Salt Stone
